Chef Ian's Roasted Beet Agrodolce pairs beautifully with Caprio Cellars 2020 Red Label Cabernet Sauvignon.
Ingredients
2 lbs Roasted Beets
½ cup Minced Shallots
½ tsp Garlic
¼ tsp Chili Flake
¾ tsp Dry Thyme
1 cup White Sugar
¾ cup Red Wine
½ cup Red Wine Vinegar
⅓ cup Golden Raisin
Directions

Saute Shallots and garlic until translucent.

Add the wine, vinegar, chili flake, thyme and bring to a boil.

Once at a boil add the beets and cook liquid down by about half.

Add Sugar and raisins. Cook until it is thick enough to coat the beets.
