Ingredients
2 cups Fresh Asian Pear
¼ cup Frisee
¼ cup Radicchio
¼ cup Orange cut to your liking
¼ cup Dried Figs
¼ cup Castelvetrano Olives
¼ cup Italian Parsley, picked
⅛ cup House Vinaigrette
¼ cup Gorganzola
House Vinaigrette
½ cup White Balsamic
⅛ cup White Vinegar
1 ½ tbsp Minced Shallot
½ tsp Minced Garlic
¾ tbsp Honey
¼ tsp Chili Flakes
½ tbsp Dijon Mustard
1 tbsp Fresh Thyme
1 ¼ tbsp Preserved Lemon Puree
¼ tsp White Pepper
1 cup Canola Oil
1 cup Extra Virgin Olive Oil
Salt, Black Pepper, & Sugar to taste
Directions
For the Vinaigrette

Process all the ingredients in a blender except for the oil.

Once all the ingredients are processed, begin to drizzle in all the oil slowly until emulsified.

Once ingredients are emulsified re-season to desired taste.
To make the salad

Toss all the ingredients together, except for the gorgonzola.

Once all the ingredients are tossed, plate and garnish with gorgonzola
